Freeze-dry is a stable process of material dried which will put the material contained with water to freeze to solid first, then make among them of the water sublimate from solid to air condition, removing water to preserve materials.
It is mainly composed of freezing system, vacuum system, heating system and control system. First, the sample is placed in a freezing system where it is quickly frozen at extremely low temperatures to crystallize the water and form a solid. A vacuum system then removes water from the frozen sample, creating a low-pressure environment. After that, the heating system gradually heats up, turning the solid water into a gas that is collected and expelled by a condenser.
Freeze-dried food preserves the original color, aroma, taste, nutrition and appearance of the original food. With good rehydration, it is an ideal natural health food.

Advantages of vacuum freeze drying:
1. Because the drying of materials is carried out under vacuum conditions, the system is highly anoxic, which can better inhibit the growth of microorganisms, so that the materials that are easy to oxidize are better protected.
2.Because the drying of the material is operated under freezing, the moisture in the material is directly sublimated from ice to water vapor to be removed, which makes the loss of some volatile components or nutrients in the material is very small, and it is more suitable for the drying of some biochemical products or foodstuffs.
3.Vacuum freeze drying is at a lower temperature (below the freezing point of water) under the operation, for many heat-sensitive material drying is particularly suitable.
